Jérôme Castagnier has been at the helm of Domaine Castagnier since his father’s retirement in 2005. The domaine has been passed down through the maternal side, changing names with each generation from Ramot to Seguin to Vadet and then finally Castagnier. Vadet was Jerome Castagnier's grandfather, making Jerome the fifth generation to run the family winery. Today, he owns four hectares total, and exceptionally, he makes four grand cru from two hectares in some of the most sought-after vineyards. Castagnier owns vines in Clos de la Roche, Clos Saint Denis, Charmes-Chambertin and 27 rows together in the Clos de Vougeot, just across the road from the Echezeaux of Romanee-Conti. In white, Castagnier owns a very old plot, planted in 1925, of Aligote near the winery in Morey-Saint-Denis.

Castagnier farms following biodynamic principles, although he is not certified. He never uses herbicides or pesticides and plows the soil. He likes to work with ample ripeness and will wait until the perfect moment to harvest. 

In the cellar, Jérôme has added a unique touch to the domaine, as an accomplished trumpeter who was a part of the Guard Republicain, the national band of France, he applies a diligent cleanliness and order to the winemaking. He normally destems the fruit entirely, but in 2015, he worked with 40% whole clusters. The juice macerates for four to six days and the fermentation starts naturally and lasts up to three weeks. He then allows the wine a month in tank to settle before moving it to barrels for 14-16 months aging, using up to 40% new oak on the grand cru. The wines are bottled without fining or filtration. The hands off approach in the cellar allows the wines to show the elegance of the terroir.
