100% Pinot Noir. Thomas-Labaille bottles both white and rosé Sancerre called L'Authentique. All of the vines are on the Kimmeridgian limestone soils of Chavignol and average 25 years old; they are sustainably farmed and harvested by hand. The rosé is a direct-press wine that, like the white, is fermented with native yeasts in fiberglass and cement tanks, aged on its lees in stainless steel tanks for 4-6 months, does not go through malolactic fermentation and is bottled without filtration.
