100% Chardonnay. The certified-organic fruit comes from a single parcel called Le Murtet (not on the label) in the Boulards' home village of Cormicy, which is the point furthest north in the Montagne de Reims--and thus in all of Champagne--in the sub-region of the Massif de Saint-Thierry. The vines are 60-80 years old and are planted on sandy limestone soils.The grapes are harvested by hand and pressed gently, with only first-press juice (la cuvée) used. It is fermented spontaneously in well-used, small oak barrels. The wine undergoes malolactic fermentation and remains on its lees with regular stirring (only on fruit and flower days per the lunar calendar), before bottling without fining and with a minimal amount of sulfur. The wine was disgorged by hand in 2017 and finished with zero dosage.
