100% Chardonnay. The fruit for this bottling comes exclusively from the grand cru village of Mailly in the little cluster of Montagne de Reims crus known as the “Grand Montagne”. Mailly is a chalky, north-facing site, arguably better known for Pinot Noir than for Chardonnay. Francis and Delphine do not own but farm this parcel of vines averaging around 30 years old. 2009 was the first vintage of their own estate/label, so this is a single-vintage wine.
As for all Boulard-owned vines, the farming is certified-organic and fully biodynamic. The fruit is harvested at high ripeness in order to achieve balance with little to no dosage. The hand-harvested bunches are gently pressed, and only first-press juice is used. It is fermented spontaneously with indigenous yeasts and continues in used, small oak barrels and 5-hectoliter half hogsheads. The wine undergoes malolactic fermentation and remains on its lees with periodic batônnage in accordance with the lunar calendar. It is bottled on biodynamic “fruit days” with no fining and with minimal sulfur. Grande Montagne spends years in bottle before manual disgorgement: the 2009 was disgorged in 2017 and finished with zero dosage.
