Paul Pillot is a family domaine in Chassagne Montrachet with an excellent set of vineyards. Its reputation has long been better than solid, but since Thierry Pillot joined his father Paul in the winery about 15 years ago there has been an incremental but notable shift upwards in quality.
Thierry and his sister Chrystelle now run the domaine but Paul is always around in the background. You’ll always see him cleaning a tractor, or whatever, so there is that continuity of knowledge. Thierry has now reached that perfect junction of youth and accumulated experience; the wines are really flying. The domaine has about 13ha of its own vineyards, mostly small parcels of Chassagne-Montrachet.
