Whole-cluster, foot-stomped, naturally co-Fermented from the Renaissance Vineyards in Oregon House, CA at 2300 foot elevation in the most wild and undeveloped part of the 1300 acre property. Aaron and Cara were invited to come pick this fruit themselves, the year before they began farming the vineyards.
Macerated on the skins and stems for 4 days and then pressed into an old French oak barrel Gideon loaned them, and then aged for 16 months on the lees. Racked for the first time the day before bottling at which point it received the one and only SO2 addition of 25 ppm.
The Harts (Stags) and their does eat most of the fruit grownn on slope 19 at Renaissance. The cuvée is made from whatever they leave. The Roussanne is grown a few thousand yards away on slope 23.
