The property covers a total of 127 acres with various elevations, complex soils, and excellent drainage. In order to maximize quality in this rugged terrain, Stephan has established a high density plantation scheme, along with a meticulous regimen of leaf pulling, shoot thinning, and cluster dropping. All of these efforts result in benchmark yields of one bottle of wine per vine. Painstaking labor in the vineyard is followed by hand-sorting, destemming, and small lot vinification of the grapes in order to maintain the integrity of each parcel. Aging in French oak and a minimal racking program also contribute to Stephan's artisan style. Vineyard Manager, Dave DeBusk, shares Stephan’s passion for sustainable methods, along with his drive for fully mature fruit, and impeccable attention to detail at every step of winemaking.
